- You need 1 lb of cherry tomatoes (or more).
- Prepare 2 tsp of fine sea salt.
- It's 1 of olive oil, extra virgin.
- It's 1 of garlic clove.
- You need 1 bunch of fresh rosemary.
Homemade Sun Dried Tomatoes step by step
- Halve cherry tomatoes and put them on a wooden cutting board lined with parchment paper. Add salt (it draws moisture out of the tomatoes).
- Set tomatoes on your balcony in the sun. My tomatoes took 3 days to dry, it's 40°C outside. They should be dry but not crispy, you're looking for the texture of a dried apricot. If the tomatoes are too dry, they won't taste good and if they are too watery, they will spoil quickly in the jar, so check regularly on them.
- Once dry, put tomatoes in a sterilized jar, submerge in good quality olive oil. You can add spices as well, I added fresh rosemary and a whole clove of garlic.
