Ingredients of Vodka Sauce
- Prepare 1 tablespoon of butter.
- Prepare 1 tablespoon of olive oil.
- Prepare 1 of small onion chopped.
- Prepare 1 (28 oz) of can plum tomatoes chopped.
- It's 1/2 cup of cream.
- It's 1/4 cup of vodka.
- Prepare 1/4 teaspoon of crushed red pepper.
- Prepare 1/2 cup of Parmesan cheese.
A piece of advice: use the best vodka you can - it really makes a big difference! Serve with pasta, and garnish with grated Parmesan cheese. A tomato paste-heavy vodka sauce has wonderful fruity depth that, to me, gives the sauce part of its signature flavor. But even a full tube of paste combined with a whole lot of cream can't quite make enough sauce for four servings, and leaves the onion flavor too dominant.
Vodka Sauce instructions
- Melt butter with oil in large saucepan.
- Add onion and saute until translucent.
- Add tomatoes and cook until no liquid remains. Stir frequently (about 20 min).
- Add cream, vodka and red pepper and bring to a boil.
- Lower heat and simmer for 5 min.
- Remove from heat and stir in parmesan cheese.
- Tip: vodka sauce is best served with a tubular dried pasta such as penne, rigatoni, or even gnocchi!.
Remove from the heat and stir in the vodka, tomatoes and salt to taste. My son loves vodka sauce in restaurants but he doesn't like chunks of tomato. So before adding the heavy cream, I used a hand blender to break up the chunks of tomato. I love vodka sauce so I am a little sad that it still isn't that easy to make.
